
Za’atar Swiss Chards

There is something about Za’atar hitting the oil. This fragrant spice blend is one of my favorites to cook with. Its a goldilock zone of spices which has perfect balance of aroma, flavor and tanginess all in one. From greens to vegetables to meats, you can add this to almost anything to flavor it up.
Ingredients
1 bunch Red Swiss chard (2-3 cups when chopped)
1/4 chopped onion
2 tbsp crushed ginger garlic
1/4 chopped tomato
Spices
1/4 tsp Cumin seeds, 2 tbsp Za’atar spice, Salt, 1-2 tsp black pepper powder
Oil
Coconut Oil (Vegan) Or Ghee(Non Vegan)

Cooking Technique
Clean & Cut
Wash the red Swiss Chard properly. Then chop the chard along with its red stalk. Unless the stalks are too tough , you can use them all. There is no need to throw any part away.
Dice the onion.
Cooking
Heat the wok (Karahi) on medium heat. Add oil and temper with cumin seeds.
In the sequence add, ginger garlic paste, chopped tomato, pinch of salt and za’atar spice blend.
Stir it for 2-3 mts and then add the chopped chard to it.
Salt it and let it cook without closing the lid for another 10 mts while sauteing occasionally.
Serve with Warm garlic and herb Couscous.
