
Tadka – (Tempering)

Tadka in Indian cooking means tempering. It adds smokiness to the dish when tempered.
How to Temper? Heat the oil in a pan on medium flame. When it’s hot enough but not too hot then add the cumin seeds, mustard seeds and cook until you hear the crackling sound.
Do not let it burn and always keep the flame on medium heat. Once it crackles then pour it over the dish .
